Message at least on a Twin Turbo, simply unplugging the det sensor connector located at the rear of the plenum will put the car into safety boost (retarded timing). Also, I cant recall what it is, but there is a type of resistor you can connect to that same plug to make it think you have a functioning det sensor.

Meaning, you could make a switch that has that resistor wired to the plug on one side (fake det sensor, no safety boost), and just an open connection (no det sensor detected, ECU goes into safety boost mode) on the other. Switch it on and off as you wish.

I would not recommend this method however, just do a correct install. There is a lot of piping, but if you are skilled enough to mess with all the custom work involved in what you are talking about doing then you can learn to pull the motor in a couple hours making turbo access easy.
